Creamy Sugar Snap Pea and Radish Salad

What is it about creamy salad dressing that is SO good!? I just love a good ranch or blue cheese dressing, but I rarely have it because it is laden with high calorie, high fat ingredients. Ok, that totally defeats the purpose of the healthy choice of a salad. A salad ceases to be healthy when you add a delicious creamy dressing and cheese to it right? Usually yes, but it doesn’t have to! Not if you make it the way that I did in this recipe.
I took the fresh Spring produce of sugar snap peas, radishes, carrots, and red onion and mixed them with a homemade creamy herb dressing made from lower fat, lower calorie, heart-healthy ingredients. Adding a sprinkle of goat cheese on top (or feta works too if you prefer) for even more creaminess and flavor will totally satisfy your dressing desires. You will be walking right past that full fat dressing and not miss it at all, nor will your guests if you serve this salad as a side dish at a brunch or picnic.
Ingredients:
12. oz sugar snap peas, trimmed
1 cup radishes, thinly sliced
1 cup carrots, shredded
1/2 small red onion, thinly sliced
1 tbsp. unsweetened almond milk
2 tbsp. light mayo
2 tbsp. nonfat, plain Greek yogurt
2 tbsp. non-fat sour cream
4 tbsp. goat cheese, crumbled
1 tbsp. fresh tarragon, chopped
Spices to taste: garlic powder, onion powder, salt and pepper

Recipe:
In a large bowl, mix the sugar snap peas, radishes, carrots, and onions together.
To make the Creamy Herb Dressing, take a small bowl, and mix the almond milk, mayo,
Greek yogurt, sour cream, tarragon, and spices together.
Pour the dressing over the vegetables and mix well, coating all of the ingredients in the
large bowl. Scoop out 1 heaping cup of salad per serving and plate. Top each serving with
1 tbsp. of crumbled goat cheese. Enjoy!
