Cheesy Bacon and Broccoli Breakfast "Souffle"

This quick & easy breakfast is loaded with protein and packed with cheesy broccoli goodness! It makes a huge portion, will keep your blood sugar balanced, and stave off hunger for hours.
Oh my, this is SO YUM! It tastes like a cheesy broccoli soufflé but it’s actually a scramble only taking about 7 minutes to make in a frying pan!
Ingredients:
1 tsp butter or spray oil
1 slice canadian bacon, chopped small
1 1/2 cup broccoli, steamed well and chopped
2 whole eggs
1 tsp milk
¼ cup shredded cheddar
½ tsp garlic salt
½ tsp onion powder
¼ tsp black pepper

Recipe:
In order for this to be a quick cooking breakfast, I pre-steam the broccoli the night before, or use leftover broccoli from a previous meal. Make sure the broccoli is well cooked so it will be easy to mash up in the morning. Store it in the fridge overnight.
Spray a small frying pan with oil or use 1 tsp of butter to saute Canadian bacon until crispy. Add in the steamed broccoli and mash it with a fork, combining it with the Canadian bacon. Sauté both together, adding in the garlic, salt, onion powder, and black pepper. Whisk two eggs and the tsp of milk together. Add them to the pan and lightly scrambled all together until the eggs have cooked through. Lastly, sprinkle the shredded cheddar over the top. Cover and remove from heat to let the cheese melt. Once the cheese has melted, plate, serve with fresh fruits or veggies, and dig in!
