Cheesy Cheddar Bacon and Broccoli Soup


Hey Food Finders!


Who doesn’t love the flavor combination of bacon, cheddar, and broccoli? I recently blogged about a quick breakfast “souffle” with this flavor combination. I was planning on making it for breakfast tomorrow when I started thinking about my “Souper Saturday” feature. I wondered if I could make a light and healthy soup with this winning combination, and of course the answer was YES!

After some experimentation, the outcome is a deliciously creamy, cheesy, smoky, and flavor-filled soup that is low in points and calories, and totally healthy! The directions are easy to follow, there are no crazy ingredients, and it whips up super quickly.  This Cheesy Cheddar Bacon and Broccoli Soup is perfect as the main course, but would also work as tasty savory snack or first course!

Definitely add this soup to your chilly weather recipe line-up!


The Facts

Recipe makes 6 Servings

1 Serving = 1 cup, 1 SP, and 56 calories

Ingredients

Spray oil

1 tsp garlic, minced

1 sweet onion, chopped

2 ribs of celery, chopped

12 oz. broccoli, cut into florets

4 cups fat free chicken broth

4 Laughing Cow Cheddar Cheese Wedges (any flavor or combination you like works!)

1 tsp Garlic powder

1 tsp salt

½ tsp black pepper

4 slices Al Fresco Uncured Chicken Bacon, chopped

Note: Use the shelf-stable bacon that comes in a box, not the refrigerated variety.

Directions:

Spray a soup pot with oil.  Cook onions on medium-high heat until soft, stirring occasionally. Add garlic, celery, and broccoli.  Give a quick stir to combine all the vegetables and add in chicken broth. Bring to a boil, and then reduce heat and simmer.

When the vegetables are very soft, add 4 cheese wedges and spices. Blend using an immersion blender until creamy and fully blended. You can use a regular blender, but very careful when transferring the soup to the blender as it is very hot! If you like a thicker consistency, just let it simmer for a while longer.

Lastly, stir in most of the chopped bacon.  Save a little chopped bacon to garnish the soup once you are about to serve it.
