Chicken Cacciatore Pizza

A few months back I kept seeing one of the group members in my Facebook group Weight Watcher Food Finds talking about this pizza crust called Brooklyn Bred Ancient Grains Pizza Crust (Thanks Cindy!). It took awhile for me to find it but, man was it worth the search! This is one hearty pizza crust, which can hold oodles and oodles of veggies and sauce without making it soggy! ¼ of this HUGE crust is only 4 SP and 140 calories. Check the Brooklyn Bred website and click on “Where To Buy” for stores carrying it near you. If you can’t get it locally, Amazon sells it in bulk and you can store it in your freezer.

I finally got a chance to try it this past week! I was having a good friend stay over and I wanted to make her a sausage and peppers pizza, but when I took out the sausages to cook, I noticed the package had a puncture in it so I had to throw it away. I scrambled to think it what other ingredients I had on hand to make a special pizza for my friend. Skinless boneless chicken breast to the rescue! I always have that on hand in my freezer so I pulled it out, along with most of the same ingredients I was going to use for the first one, and my Chicken Cacciatore Pizza was born!
Ingredients:
1 Brooklyn Bred Pizza Crust
(If you can't get Brooklyn Bred, just use your favorite crust and adjust the points/calories)
Olive oil spray
1 tbsp garlic, minced
1 large sweet onion, chopped
1 ½ cup sweet bell peppers, chopped
1 cup mushrooms, chopped
8oz. skinless sliced chicken breast, uncooked
1 14.5oz can Hunts tomato sauce
1 tbsp garlic powder
1 tbsp onion powder
1 tsp black pepper
2 tsp Italian seasoning
¼ cup shredded mozzarella
2 tbsp grated parmesan cheese
2 tbsp parsley, chopped
Recipe:
Preheat oven to 400F.
Spray a large pan with olive oil and place on medium heat. Add minced garlic and let warm for 1 minute. Add in chopped onions and peppers. Saute until the vegetables start to soften and then add in the mushrooms. Continue to saute until the vegetables are cooked through, about 5 minutes. Add in the sliced chicken, tomato sauce, garlic powder, onion powder, black pepper, and Italian seasoning. Saute everything together until the chicken is cooked through and the mixture has thickened so it’s not watery. Remove from heat.
Place your Brooklyn Bred Pizza Crust on a baking sheet. Spread the chicken cacciatore mixture onto the pizza crust. Sprinkle the mozzarella and parmesan evenly over the top. Bake for 10 minutes or until the cheese is bubbly and golden brown.
Remove from oven and garnish with fresh chopped parsley over the top.
