Hanukkah Latkes


Hey Food Finders!


The Jewish holiday Hanukkah starts tomorrow and my absolute favorite traditional food to make are Latkes (potato pancakes).

O.M.G! Nothing makes the house smell better than Latkes cooking!


The Best Ways to Eat Latkes


My personal favorite way to eat them is either plain with sea salt sprinkled on top or with light sour cream.  But I know a lot of people who fall on the side of eating them with applesauce. Either way, it is a treat that doesn’t disappoint.

Traditionally they are fried in lots of oil. In order to make them healthy, I used to pan fry them in olive oil spray.  Now with the invention of the Air Fryer, I air fry them for an even more golden brown and crispier latke! I am going to show you how to make them both ways.


The Facts


Recipe Makes: 16 Servings

1 Serving = 1 Latke, 1 SP, and 40 Calories


Ingredients


16 oz. shredded potato

Note: I used a bag of shredded potatoes from the frozen food section at the supermarket to make this very easy to make. But you could shred your potatoes by hand or use a food processor with a shredding blade.

1 onion, chopped

1/4 cup potato starch

2 eggs

1 tsp salt

Oil spray

Optional: Serve with light or fat free sour cream and/or applesauce (Count any points you use)


Recipe


First, make sure to squeeze all of the liquid out of the potatoes using a dish towel or paper towels.  The drier the potatoes the crispier they will be in the end. Then in a medium-size bowl, mix all of the ingredients together by hand.

To Air Fry

Spray the basket with oil spray. Using a ¼ cup measuring cup, scoop out 1/4 cup of the mixture and place it in the basket to make one pancake and gently flatten it out a bit. Do this with as many pancakes as you have room for. Mist the tops with the olive oil as well. They will need it when you flip them. Air fry on 400°F for about 8-10 minutes but keep an eye in them to make sure they don’t burn. Then flip them and let them cook another approximately 8 more minutes on the other side. When golden brown all the way around they are done!  I cooked them in my Breville Smart Oven Air on the “Air Fry” setting so there is much more surface area to work with than a traditional air fryer. But it will still work with any air fryer. You just might not be able to make as many at one time. Use the cooking times above as approximations since each air fryer can be slightly different.

To Pan Fry

On medium heat, spray your pan with oil. Using a ¼ cup measuring cup, scoop out 1/4 cup of the latke mixture and place it in the pan and gently flatten them out a bit. Mist the tops with a little olive oil. They will need the oil when you flip them. Cook on medium heat for about 8-10 minutes but don’t let them burn. Then flip them and let them cook another approx. 8 minutes on the other side. When golden brown all the way around, they are done.

Serve with light sour cream or applesauce. I like mine with a sprinkle of added salt! SO GOOD!

The fact that they are only 1 SP and 40 calories each is a gift itself.
