Spanakopita Chicken

If you’ve been subscribed to my blog for a while, you know that I LOVE Greek food! Last year my favorite local Greek restaurant closed its doors. I had been going there since I was 8 years old, over 40 years! I seriously grieved its closing. To cheer myself up I created this recipe full of the delicious Greek flavors I love so much. 

One of my Favorite Dishes

Spanakopita is one of my favorites dishes to eat at my beloved Greek restaurant.  Also called “spinach pie,” it is full of spinach, onions, and feta cheese and wrapped in a flaky phyllo dough.  To bring the points and calories down a few levels, I ditched the phyllo dough and replaced it with chicken breast, but the Spanakopita “Spinach Pie” filling remains the same. That’s how this Spanakopita Chicken recipe came to be.  It was a hit! This dish is full of protein, iron, and bold flavors. If you like Greek foods, you will love this dish!

The Facts

Recipe makes 5 Servings

1 Serving = 1 Chicken breast topped w/ ⅕ of the Spanakopita mixture

Ingredients

5 Raw chicken breasts, thinly sliced

Olive oil spray

1 Onion, chopped

1 Tbsp garlic, minced

16 oz. Frozen spinach, thawed & drained

2 Tbsp fresh dill (or 1 tsp dried)

6 oz Fat free feta cheese

2 Eggs

5 Tbsp part-skim shredded mozzarella

1 tsp Greek seasoning

Note: If you don’t have Greek seasoning, use ¼ tsp of each: salt, pepper, garlic powder, and basil.

Directions

Preheat oven to 350 F.

Spray a baking sheet with oil and lay your chicken breasts side by side on the sheet.

In a large frying pan, spray with oil and add your onions. Cook on medium, stirring occasionally.  Heat until onions soften. Add garlic and saute together for 1 minute. Mix in the spinach and dill and saute together for 5 minutes or until most of the moisture is gone.

 Remove from heat.

In a separate bowl, mix the feta cheese, eggs, and Greek spices.  Add the feta mixture to the spinach mixture, and combine thoroughly. Divide the mixture into 5 equal servings and spread each serving on top of a chicken breast. Top each serving with 1 tbsp of shredded mozzarella.

Bake for 35 minutes or until the chicken breast is cooked through and the cheese is golden brown.
