Happy Mother’s Day Sunshine!
My parents came to spend an early Mother’s Day with me last weekend. Due to dietary preferences I wanted to make a gluten-free, yolk-free, veggie & bacon quiche. I was so nervous about how it would come out that I actually had a nightmare about it the night before making it! I just couldn’t imagine how good a gluten-free, yolk-free quiche could be? And I really wanted it to be delicious for my mom. I dreamed that came out of the oven raw and was just a disaster. Haha!
Well after actually making it, it was a hit! My dad actually ate 3 pieces and wanted more. I made an extra quiche and sent it home with them. I was so happy with how it came out that I wanted to share the recipe with you all. It was so easy to make and super healthy. You can even get the kids involved in arranging the veggies and bacon in the pie shell. It would also make a great breakfast-in-bed treat with a side salad, a mug of coffee, and a little flower in a bud vase on the tray!
1 gluten-free pie crust
Note: I used Wholly Wholesome Bake At Home Pie Shells, Gluten Free 9 inch
2 cups Egg Beaters Original
2 cups broccoli. chopped
1 cup cauliflower, chopped
5 slices Canadian Bacon (or lean ham), chopped
½ cup shredded cheddar cheese
1 tsp onion powder
1 tsp garlic powder
½ tsp salt
¼ tsp pepper
Preheat oven to 375 F
In a steamer over high heat, steam the broccoli and cauliflower until cooked through.
Arrange the steamed broccoli and cauliflower in the gluten free pie shell. Sprinkle the chopped Canadian bacon over the top. In a medium sized bowl, whisk the egg beaters with the spices and pour into the pie shell, over all of the veggies and bacon.
Bake the quiche for 50 minutes. At that point, sprinkle the cheese on top and bake for another 10 minutes. Broil on high for 1 extra minute if you like the cheese golden brown.
Cut quiche into 8 hearty slices.
Each slice is only 165 calories and 5sp (WW points).
