Carrot, Raisin, and Apple Salad

Hey Food Finders!

Carrot and Raisin Salad has been one of my mother’s favorite dishes for as long as I can remember. Whenever I make it, I think of her and smile. So this dish is in honor of my mom. It’s simple, sweet, and crunchy. Love ya Mom!

The Facts

Makes 6 servings

1 serving = ½ cup, 1 SP, and 60 calories

Ingredients

3 cups of carrots, shredded

1/4 cup raisins

½ apple, diced into small pieces

1 7/8 tbsp light mayonnaise

1 tbsp skim milk

½ tsp lemon juice

1 packet of Truvia (or sweetener of choice)

Directions

In a medium size mixing bowl, combine all of the ingredients listed above, and mix well.  That’s it! It's simple as could be!

Note: I’ve also made this recipe successfully with ½ cup of crushed pineapple instead of the apple.  This adjustment doesn't change the points or calories.
