Guacamole With a Twist

Hey Food Finders!

Guacamole lovers, prepare yourselves! Make this for your next party and your friends are not going to believe that it's actually the healthiest, low point guacamole ever after tasting how delicious it is.

The Twist 

There are some BIG surprises in this guacamole...

1. There are peas in it!

2. There is broccoli in it!

3. It is still the creamiest guacamole you’ve ever had!

4. You can eat more of it for less points than regular guacamole!

5. Because of the addition of peas and broccoli, the guacamole actually stays green and doesn’t turn brown like regular guacamole does after sitting out for a bit!

Ingredients

2 ripe avocados

1 cup frozen broccoli, thawed

3/4 cup frozen peas, thawed

1 tomato, chopped

1 small/medium onion, chopped

1 tbsp. Fresh cilantro (or 1 tsp dried)

1-2 limes, juiced

1 tsp. Salt

Tabasco to taste (or your favorite hot sauce)

  The Facts

Recipe makes 3 cups.

¼ cup serving = 1 SP and 48 calories

Directions

In a food processor, put in all of the ingredients, except for the onions and tomatoes. Leave the chopped onions and tomatoes to the side for now. Pulse the rest of the ingredients until smooth and creamy. Now is the time to taste and adjust the spices to your liking if needed (more lime, salt, cilantro, or hot sauce, etc.). Scoop out into a medium-size bowl and mix in the onions and tomatoes. Taste it again to make sure it’s spicy, tangy, or salty enough for your tastebuds. Remember, it's easy to add more spices in, but you can't take them out after! I love mine with a lot of lime, salt, and hot sauce!

Serve with baked tortilla chips or on toast (add additional points for the chips or bread).
