Cucumber and Onion Summer Salad

I live on this handy dandy little salad every summer, all summer long. I first learned a version of the recipe a few years back from my friend Sandy in my Weight Watchers meeting (thanks Sandy!). The cucumbers and onions make this such a refreshing and flavor-filled salad to have as a snack or side dish. I often make a double batch as you can see by the large number of cucumbers in my photos! You can literally eat as much of it as you want, whenever you want, because it is 0 SP and only 12 calories per serving! You just can’t beat that.
The Facts
Recipe makes 6 servings
1 Serving = 1/2 cup
0 SP and 12 calories
Ingredients
5 mini cucumbers (or 2 large ones)
1 small to medium sliced onion (red or sweet)
½ cup distilled white vinegar
½ cup water
2 Tbsp Truvia
Directions
Peel and slice the cucumbers. I like to peel them so that there are stripes of the skin still on (as pictured in the slideshow below). Peel and thinly slice the onion. Mix the cucumber and onion together and place in a large glass or ceramic bowl.
In a small saucepan, bring the vinegar and water to a boil. Turn off the heat and stir in the Truvia. Immediately pour the liquid over the cucumbers & onions and gently mix. Make sure that as many of the vegetables are submerged in the liquid as possible.
After it cools, you can transfer it to a plastic container if you’d like and store in the refrigerator overnight.
Health Tip: Using a glass or ceramic bowl instead of a plastic bowl prevents the transfer of toxic carcinogens into your food when you apply heat. For example, when adding a boiling liquid as we do in this recipe.
