Fruit and Feta Salad

Happy upcoming Fourth of July! This weekend is a time to celebrate with friends and family at all sorts of BBQs, picnics, and potlucks.  This recipe is PERFECT for the occasion and very low in calories and points. It’s quick and easy to throw together for a whole party of people or just a few (by lowering the amounts to suit your needs). Best of all they are the perfect colors for this occasion! Ignite your taste buds with this sweet, salty, and refreshing salad.



4 cups watermelon chunks

2 cups cherries

2 cups blueberries

½ cup feta cheese crumbles

¼ cup fresh mint, roughly cut

Makes 8 servings - 1 serving = 1 cup,

1 SP

Toss the watermelon, cherries, and blueberries together in a bowl.  Sprinkle the feta and mint evenly over the top and serve. It’s that easy!
