Peach Pistachio Dessert Bruschetta

I was recently scanning recipes, hoping that a bolt of creativity would strike and a new idea would present itself. Skimming through some delicious looking bruschetta appetizers with the traditional tomatoes, onions, and basil with a light vinaigrette had my mouth watering... but what I was really looking for was a dessert inspiration. All of a sudden I had a lightbulb moment! Can I combine bruschetta with dessert?! The wheels started turning and thoughts of potential ingredients were racing through my head!
I finally landed on this winning combination of tangy fresh peaches, salty chopped pistachios, creamy spreadable cream cheese, crunchy toasted baguette slices, with sweet wildflower honey drizzled on top. Fresh basil adds the perfect finishing touch to bring all of the flavors and textures together for a truly delectable taste sensation. There is so much going on in this little dessert, it defies explanation. You just have to try it for yourself!
Ingredients:
1 baguette, 1oz. cut into 4 slices
1/4 of a large peach cut into 4 thin slices
1/4 cup Greek yogurt “cream cheese” (instructions below)
1 tbsp. sugar free peach preserves
1 tsp. wildflower honey
1 tbsp. pistachios, chopped
1 tbsp. fresh basil, chopped
Recipe:
To make Greek yogurt “cream cheese”: Place ½ cup of yogurt into a cheese cloth. Tie tightly and hang over a bowl in your refrigerator for 12 hours or overnight so that all of the excess liquid drains out. What you are left with is a thick spreadable “cream cheese” that is usable for anything that calls for cream cheese but it is 0sp.
To make the Dessert Bruschetta: Toast the 4 slices of baguette until golden brown. While they are toasting, mix the peach preserves with the Greek yogurt cream cheese in a small bowl. Evenly divide the mixture and spread equally over the toast slices. Top each with a slice of peach. Drizzle the honey over all 4 pieces, and sprinkle the pistachios and basil on top. Eat and enjoy!
