Apple and Pear Saute

Hey Food Finders!

A few years ago I was really craving apple pie, but didn’t want to spend the points/calories on it. I decided to try to create a quick dessert that would give me the taste and feel of the apple pie while still maintaining my goals of healthy eating.

The Backstory

I started chopping up the apples and saw a few ripe pears on my counter. I know how sweet ripe pears are so I thought I’d chop them up and throw them in the mix as well.

I simmered the apples and pears in water, apple pie spice, and vanilla.  OMG my home smelled amazing! After it all cooked down a while, I saw that the pears mixed with the spices and vanilla really gave it the bonus of a nice sweet thick syrup.

Served warm or cold, this seasonal dessert tastes outrageous any time of year! Top it with a swirl of sugar free Reddi Wip and a sprinkle of cinnamon and you have a ZERO point dessert that you could proudly serve to family and friends, or just for yourself. Adding 2 tsp of chopped walnuts or pecans for 1 SP puts it over the top. Trust me on this one!

The Facts

Makes 6 Servings

1 Serving = ¾ cup, 0 SP, and 70 calories

Ingredients

3 apples, chopped with skin still on

2 pears, chopped with skin still on

1 cup water

1 tbsp vanilla extract

1 tsp apple pie spice (or a mix of cinnamon, nutmeg, and cloves)

1 packet of stevia or sweetener of your choice to give it that added sweetness  

Sugar Free Reddi Whip

Optional: 2 tsp chopped walnuts or pecans to sprinkle on top (add 1sp or 26 calories)

Recipe

In a large pan, add apples, pears, water, vanilla, and spices. Place on medium heat and cover.  Stirring occasionally, cook until the apples and pears are very soft. If the water evaporates before the fruits are soft, just add more water. Once the fruit is very soft, uncover, reduce heat and stir in any added sweetener you are using. Continue to simmer until the excess liquid evaporates and cooks down to a thick syrup.

Place portions into a small bowl or cup, spray with Reddi Whip, and sprinkle with extra spices or optional chopped nuts.  Eat & Enjoy!
