Fruity Sangria and Grilled Shrimp Guacamole Bites

Memorial Day (or should I say Memorial Day Weekend!) is upon us which means tons of parties, picnics, potlucks, and grilling! How do you handle all of this entertaining, have fun, AND still eat healthy? It takes just a bit of planning, but having a few simple and delicious recipes in your arsenal will make all the difference!

Here are 2 ideas for your Memorial Day Weekend repertoire.

Add a little Mexican flair to your fun with these simple, easy, and quick recipes. This colorful Sangria is filled from top to bottom with fruit, and while it does soak in some of the alcohol, the fruit is still healthy! In this recipe you’ll wind up eating more fruit than drinking alcohol. The grilled shrimp guacamole bites take no time to put together.  If grilling the shrimp isn't an option, using pre-cooked shrimp is actually easier and faster! I used store bought guacamole for this dish for the ease of it. You could make your own if you’d like. But, if you buy it, just make sure the ingredients are all natural with avocado, onion, lime, cilantro, and jalapeno as the main ingredients.

Ingredients for Fruity Sangria:

3 cups fresh fruit, sliced (such as apples, oranges, pears, pineapple, or berries)

1 Bottle Red Wine

1 ½ oz Brandy (optional)

16 oz. Diet Soda (Ginger Ale, Lemon-Lime, OR Orange will work)

Ice

Recipe for Fruity Sangria:

In a large glass pitcher, place the fruit in first followed by the wine and brandy and stir. Chill in the refrigerator for at least 4 hours.  When ready to serve, add the diet soda to the pitcher. Place ice in your glass and fill with sangria. Garnish with lots of fruit!

Ingredients for Grilled Shrimp Guacamole Bites:

10 Tostidos Scoops

10 tsp. guacamole

10 shrimp, small

5 cherry tomatoes, halved

1 tbsp fresh cilantro, chopped

2 tsp fresh lime juice


Recipe for Grilled Shrimp Guacamole Bites:

In a grill pan, cook the shrimp on both sides until hot and cooked through

Fill each Tostidos Scoop with 1 tsp of guacamole and top with a slice of cherry tomato and a shrimp.  

Sprinkle a bit of lime juice and fresh cilantro on each “bite”.
