I don’t know about you, but I LOVE broiled salmon. Believe it or not it is one of the easiest things in the world to make! Salmon is loaded with healthy Omega-3 oils too, making it a staple in my weekly dinner line-up. When it comes out of the broiler it’s crisp on the outside but moist and buttery on the inside. I love to eat the salmon straight from the oven, but there are so many things you can do to jazz it up even more.
One of my Spring & Summer favorites is to top the broiled salmon with a sweet & tangy mango salsa. It just gives it that extra little something to put it over the top. The mango salsa is loaded with immune building antioxidants as well, making this a power-packed, protein-filled meal! If you are following the Weight Watcher plan, this meal is ZERO points! You just can’t beat that.
Ingredients for Salmon
Two 4 oz. salmon fillets
1 tsp of each: garlic powder, onion powder, lemon pepper
Recipe for Salmon
Lightly spray a baking dish with oil and place both fillets in the dish, a few inches apart. Give the tops of the fillets a quick spray to allow the spices to stick. Sprinkle all the spices (more if you’d like), on top of the fillets and broil on low for 12-15 minutes depending on the thickness of the fillets until golden brown.
Ingredients for Mango Lime Salsa
1 ripe mango, diced
1 small cucumber, diced
1/2 red pepper, diced
1/4 small red onion, diced
2 tbsp. fresh Cilantro
1/4 tsp. salt
1/4 tsp. pepper
Optional: 1/4 fresh jalapeno, minced (for heat) or 1 pkt Truvia (for sweet)
Recipe for Mango Lime Salsa
Combine all ingredients in medium sized mixing bowl. Adjust the spices to your liking. Add the jalapeno if you prefer spicy, and Truvia if you want to add some sweetness.
Putting it all together: Plate the salmon fillets and top with the Mango-Lime Salsa.
Recipe Makes 2 servings
1 Serving = 4 oz. salmon fillet and 1/2 of the salsa
ZERO SP per serving, 175 calories, 22g protein
Writing about this deliciously healthy meal is making me crave it myself! The blend of flavors from the decadent butter salmon paired with the tanginess of the salsa always triggers my anticipation for this home cooked meal. Enjoy this delicious and refreshing dish!
