Lemony Avocado Kale Salad

I was never a fan of kale. I used to think it was too chewy or tough, and not worth all the healthy-hype.  That is, until I made this salad. I had read about a version of it a few years back. Then I started to experiment until I hit on this simple, delicious, and nutritious salad that I literally could not stop eating!

The mix of lemon, olive oil, and avocado is so addicting,  and what great ingredients to be addicted to! I make this salad all summer for picnics, potlucks, and just to have at home. You can eat it without adding additional ingredients to it, but its also perfect with chickpeas or grilled chicken added to it for a full protein meal.Whether you are a fan of kale or not, if you love lemon and avocados, TRY THIS recipe.  I bet you will fall in love with it!

Ingredients:

12oz kale, deveined and chopped (I buy a 12oz bag all ready to go)

1 small red onion, sliced thinly

1 Hass avocado

1 cup cherry tomatoes, halved

1 lemon, juiced

2 Tbsp olive oil

½ tsp black pepper

½ tsp sea salt

Optional: 1 cup chickpeas

Recipe:

First, wash your hands. This is going to get a little messy for a few minutes! But messy is FUN right??

In a large bowl, combine the kale, olive oil (please do not lessen the amount of olive oil for this recipe, the kale needs the olive oil in order to soften properly), avocado, and lemon juice. Massage the ingredients all together with your hands until the kale has become very tender. This will take a few minutes to really soften the kale. This is the key for making a great kale salad.  Make sure the avocado is completely mashed throughout the salad. Then add the cherry tomatoes, salt and pepper and mix well. Chickpeas also go great in this salad so if you want to add some, toss them in at the end.
