"Yankee" Cowboy Caviar

My "Yankee" Cowboy Caviar would make a great offering for a Labor Day Picnic! I call this “Yankee” Cowboy Caviar because I’m a born and bred Yankee who used to live in Cowboy Country Montana. But in reality, the dish is a pretty traditional, delicious, and healthy Southern staple. Not only does it taste SO good, it’s also loaded with nutrients from a variety of beans, vegetables, herbs, and seasonings. It’s the perfect bean salad dip for anyone watching their health.

I made this for the first time last year during the holidays for entertaining and it was a huge hit with my friends. I’ve been making it ever since because I love it so much.

The Facts

Recipe makes 8 Servings

1 serving = 1 cup

1 SP and 132 calories per serving

Ingredients

1 avocado, diced

1 green pepper, diced

1 small red onion, diced

3 tomatoes, diced

1 jalapeno, diced

15 oz. can black beans

15 oz. can black-eyed peas or red beans

15 oz. can corn, no added sugar, drained

1-2 limes, juiced

1 tbsp olive oil

1 tbsp white wine vinegar

2 packets Truvia

2 Tbsp fresh chopped cilantro, 1 tbsp dried

1 Tbsp garlic powder

1 Tbsp onion powder

1 tsp salt

1 tsp black pepper

Directions

In a large bowl, mix all of the ingredients. Taste it and add more seasoning if you like it with a fuller flavor. Serve! This dish pairs perfectly with Tostitos Scoops, just remember to count in the extra smart points or calories.
