Low Carb BLT Bites (Jingle Bell Bites)

Who doesn’t love the perfect flavor and texture combination of a BLT? The smokiness and crunch of the bacon, paired with the freshness of the veggies, and creaminess of the mayo creates the perfect bite. The only problem that comes with eating BLT’s is the carbohydrates in the bread.

My version of this recipe, eliminates the need for bread, creating a delicious low carb treat. These fun BLT Bites are perfect to eat any time of year but they are especially fantastic for holiday parties. I call them Jingle Bell Bites this time of year to make the recipe even more festive! This bite sized appetizer tastes so decadent, you’ll feel like you’re totally cheating, but can continue eating guilt free!

 The Facts


Recipe makes 5 Servings (15 BLT Bites)

1 Serving = 3 BLT Bites, 1 SP, and 30 calories


Ingredients


15 petite roma tomatoes

Ingredient Note: Roma tomatoes are a little bigger than cherry tomatoes, and much smaller than a regular size tomato. Cherry tomatoes would work fine as well.

2 tbsp light mayonnaise

1 crispy slice of real bacon

Ingredient Note: You could use turkey bacon but it is the same amount of points in the end for one slice spread through the entire recipe.

1 cup of lettuce, spinach, or arugula as a garnish or to place under the tomatoes on the plate

Spices: a dash of garlic powder, onion powder, salt, black pepper, & parsley.


Directions


Using a pan on medium heat, cook one slice of bacon until crispy.  Put aside for later use.

Cut 1/4 inch off of the bottom of each tomato. You want to cut off the bottom because the top side is relatively flat and when you turn it over it sits upright nicely with the scooped part now on top.

In a small bowl, add mayo and add a dash of garlic powder, onion powder, salt, and black pepper and mix. This makes a very delicious flavorful mayonnaise.

Take a small spoon and scoop out a little bit of the inside of each tomato. Using all of the mayonnaise mixture, divide and spread equally into the scooped top of each tomato.

Break up the bacon into 15 pieces, place a piece into the mayo in each tomato.

Garnish the plate with lettuce, spinach, or arugula and sprinkle dried parsley over the tomatoes for a pretty red and green holiday effect. Eat & Enjoy!
